You have two different “flavours” of dedicated server depending on how much responsibility you wish to bear on running it.

Unmanaged servers you get full root or remote desktop access to but with a managed server you would only get partial control over.

Unmanaged servers, you have to know how to maintain and run your server,  when I say maintain I mean keeping software up to date, keep the server secure and the risk of being compromised as small as possible.Plus all the other daily or weekly tasks you need to perform.  Access would be via root or remote desktop, which would all you complete and unrestricted access to your server to do anything you need to do.  

What will the server company do?  

 The server host would still be responsible for the hardware of your server, but they might not have any monitoring software installed, so any issues you notice you would need to report to avoid an problems. They will of course install the operating system but this is where there responsibility then stops.You can ask them to help you as you will be given a certain amount of support time per month but this is normally not much. Should you really kill your server, it might prove costly to sort the mess out and so may be better getting a format and reinstall done instead.  A provider of a dedicated server web like Melbourne should be able to offer you the right solutions.
